Slacker

I was working on my Sunny Days Boutique blogs, and ran across this blog that I had set up quite a while ago and realized that it was a fun little blog. My resolution is to post 3-4 new meals per month (maybe when I get more in the groove that number will be more like per week). My mom recently re-joined Weight Watcher, and purchased a few cookbooks with tons of yummy looking recipes that I can't wait to try.

Mexican stirfry

This rendition did not have enough flavoring for me.

On a back burner cook whole wheat noodles. Drain when tender enough.  Slice up some onion, bell peppers, and pork.  Pam fry the pork in large skillet sprinkle with chili powder, garlic salt, and cumin. Pam fry the veggies until they are limp.  Add veggies and noodles to the cooked pork.  Serve.

Next time, I am going to use fresh garlic and some garlic oil, add some water the the pork pan to get the flavors, and use penne noodles.  We'll see.

Buffalo "wings"

Pair this with some sweet potato chips, veggies and a salad and you have a great meal.

This is just some boneless-skinless chicken breast cut into strip and fried (in a Pam sprayed skillet) with some of your favorite buffalo wing sauce. The sauce is less than 50 calories per two tablespoons, so you're doing fine. If you need to dip the wings, choose a low fat or fat free salad dressing, Ranch or Blue Cheese.

Wheat-free Chocolate Cake

I got this recipe from my mom.  As a non-chocolate cake lover, it wasn't bad.

Next time Spice or carrot cake.

Caramel Apple Crisp

With the new acquisition of a food processor. This treat is super easy and super yumm!

Chop up as many apples as you would like, depending on how big you would like your pie. In a greased pie pan (I use Pam) layer apples, cinnamon, Splenda and cornstarch. Bake in a preheated oven, 350, for 40-45 minutes. If you would like to add flair, cover the pie with a mixture of Splenda Brown Sugar and oats, or granola, cinnamon. For more fun, when the pie is done baking, warm some LiteHouse Caramel Apple dip and drizzle on top. And YUM!

Onion and Jerk Chicken

Tuck the chicken and onions to sleep on a nice bed of romaine lettuce and you have a tasty lunch.

In one skillet sprayed with Pam, fry up some onions, as many as you want, until they look like worms.

In a separate Pam coated pan, fry up for strip cut or cube cut boneless-skinless chicken breast and season with Jerk seasoning salt.  When the chicken is almost done cooking, add the contents of the smaller skillet to the larger.  Cook till chicken is done.  Enjoy.
